This incredible, refreshing dessert created by my friend and dietician, Ariadne Legendre, is light yet has an incredible depth of flavour which will have you dreaming of the tropics. She made it for me when we had dinner at their house last year and I begged and begged her to give me the recipe so I could continue to make it at home.
She did me one better and offered to let me publish it so all of you can enjoy it too! I love desserts that are made with coconut because there are so many healthy benefits, such as the ones listed here. It’s also the perfect chilled dessert for entertaining because all the hard work can be done the day before and you are sure to impress your guests with this dreamy dessert!
Coconut Panna Cotta

- 3 400 ml cans of full-fat coconut milk
- 2 envelops of gelatin
- 1/2 c of honey
- 1 vanilla bean
- 1/2 c of finely chopped fresh strawberries
- 1/2 c of finely chopped mango (fresh or frozen will do)
- juice of 1 lime
- handful of fresh mint finely chopped (or to taste)
Instructions
- In a small saucepan mix coconut milk, gelatin, honey, and the seeds from the inside of the vanilla bean. Heat on medium heat until the gelatin is dissolved and milk is steaming.
- Pour into small individual bowls (to impress your guest wine glasses works well too).
- Let cool in fridge for four to five hours.
- In a small bowl, mix together strawberries, mango, mint and lime juice and set aside.
- When ready to serve, put one spoon of the fruit mixture on top of panna cotta.
