This combination of carrots and mangos, especially when paired with the zing of fresh ginger, makes this one of the best tasting, most refreshing fruit and veggie smoothies I have tried. The added boost of a full day’s worth of vitamins A and C and a good dose of fibre, is sure to move this smoothie into your regular snack rotation.
I especially like it as a pre or post workout snack as it provides you with the necessary electrolytes for rehydrating as well as anti-inflammatory properties which aid in post-workout recovery. And if you are looking for an extra dose of protein, just decrease the water a bit and add in some nonfat vanilla Greek yogurt and a handful of spinach! Enjoy.
Mango Carrot SmoothiePrint This
- 1/2 cup apple juice
- 1 1/4 - 1 1/2 cups water
- 1 medium carrot, peeled and chopped
- 2 cups frozen mango
- 1/2 inch piece ginger
- 1/2 large frozen banana
- 1 1/2 tbsp almond butter
- Add all ingredients to a high speed blender and blend until smooth.
