Homemade peanut butter cups. No preservatives. No additives. Not too sweet. Not super healthy either, but way better than the store-bought kind and made with dark chocolate to boot. The perfect once-in-a-while, after dinner treat. Keep them in the freezer so you aren’t tempted too many in one sitting.

- Chocolate Coating:
- 1 cup 50-70% dark chocolate chips
- 1 tbsp coconut oil
- pinch of sea salt
- 1 tbsp cacao powder
- Peanut Butter Filling:
- 1/2 cup natural peanut butter (no sugar)
- 1/2 cup icing sugar
- 1 tbsp unsweetened vanilla coconut or almond milk
- 2 tbsp honey
- pinch of sea salt
- In a large bowl, mix all peanut butter filling ingredients together until smooth.
- Melt coconut oil in a small saucepan, add the chocolate chips, cacao powder and sea salt and stir just until melted.
- Pour chocolate into nonstick muffin cups and place in freezer for 10 mins till solid.
- Remove from freezer and place 1 tbsp of peanut butter filling on top of each chocolate bottom, then cover with 1-2 tablespoons of chocolate.
- Return to freezer for another 15 minutes, then remove.
- Store in the fridge.
