I have to thank my amazing French language teacher, Agnes, for sharing this awesome smoothie recipe with me. When I walked into class last week and saw her sipping on this gorgeous, vibrant pink smoothie out of a mason jar, I just had to know what was in it! After hearing the abundance of healthy ingredients which included beets, cucumber, ginger, pear, and mango, I knew I had to try it to see if it tasted as good as it looked.
Luckily, I wasn’t disappointed! Although not your typical child-friendly smoothie, I fell in love with this grown-up fruit and veggie combination resulting in a tangy and tropical, but not-too-sweet and zesty smoothie. I specifically love that it incorporates two full servings of veggies in addition to your fruit servings, so you can check them off your list first thing in the morning.
My favourite way to make this smoothie is to prepare a few smoothie packs ahead of time, which cuts down on prep time in the morning and provides you with another few days of pre-made breakfasts. I simply wash and chop fresh beets, pears, cucumbers, mangoes and ginger and then pre-portion and freeze them the night before in freezer-safe ziplock bags. The next morning I simply add the wet ingredients and blend! You can double, triple of quadruple the ingredients to make additional smoothie packs.
