I used to love peanut butter and jelly as a kid. Luckily my mom was smart enough to know it wasn’t the most nutritious meal, which is why I didn’t get to eat it very often. But, I still feel nostalgic for it from time to time, so I decided to create version that I wouldn’t feel bad about eating. Did I mention my kids love it too?
In this much healthier version of PB & J, oatmeal replaces white bread, natural peanut butter replaces the fake kind, and fresh berry sauce replaces the sugar-laden jam. Add a bit of extra protein in the form of hemp hearts and you are all set up for the day with a nutritious, delicious, and macronutrient-balanced breakfast in place!
