What I love most about this recipe is that the overnight soaking shortens the cooking time of the steel cut oats by two-thirds, which is a huge time saver!
It also makes the oats super creamy and I don’t know about you, but I love smooth, creamy oatmeal, especially when topped with warmed cinnamon apples, crispy pecans and shredded coconut!

Instructions
Add apples and saute them for 3-4 mins over medium heat, then add the pecans and saute for another 2 mins.
Add the shredded coconut and saute for another minute, then add maple syrup and stir to coat.
Remove from heat, let cool and place in fridge overnight.Notes
