This smoothie makes me smile because it looks like a little jar of sunshine. At the moment, up here in the great white north (aka Canada) we are in dire need of a little bit of sunshine. Luckily, this smoothie also happens to taste fantastic, even when left out on the counter for a bit, which is true sign that you have created a gem of a smoothie.
See, I’ll let you in on a little secret…our taste buds don’t taste flavor as intensely when food is cold. You may have noticed this if you ever thought a smoothie tasted good, but then it warmed up a bit and you were like ‘What the hell was I drinking?!?‘ I’m sure you’ve been there…no? Maybe just me.
Anyhow, back to smoothie, which not only looks like a little ray of sunshine, but also bestows you with a boat-load of sunny health benefits. The carrots and mangoes are high in beta-carotene and vitamin C, the lemon is a great immune booster, the bananas are high in potassium, and the ginger is anti-inflammatory and great for aiding with digestion. Even better, this smoothie contains three whole servings of fruit!
Plus, if you want, you can dive right into the whole earth-mother thing, and make your own carrot juice. I know! It may seem super complicated, but it’s actually really fast and only requires two ingredients. However, if you prefer to buy ready-made carrot juice, it’s totally fine with me too. So, whether you choose the earth-mamma method or hip-working-chick method, don’t delay, and go grab your ray of sunshine for the day!
